Chickpeas and sweetcorn vegan burgers

We can't claim ownership of this recipe as it is Jaime Oliver's! Nevertheless, here is a picture summary with some changes to the original:

Ingredients:
  • Sweet corn (about a cup, I use frozen one, normal or the Peruvian chunkier sweet corn also works, don't worry if you haven't seen this)
  • Chickpeas (about a cup and a bit)
  • Lemon zest (one lemon)
  • Paprika (1 tea spoon)
  • Cumin (1 tea spoon)
  • Merken or aji (to taste!)
  • Pepper (to taste)
  • Salt (to taste)
  • Flour (about 3 table spoons)
  • Coriander (optional, we used a little, about an 8th of what you see in the image)

STEP 1: Boil chickpeas
 
 

STEP 2: Grate lemon skin


STEP 3: Put boiled chickpeas, sweet corn, spices, flour and lemon zest into food processor

STEP 4: Make burger patties (you can put the mix in the fridge to make it easier to stick together, as we use frozen corn, this is not necessary)

STEP 5: Fry

STEP 6: Enjoy!

With Quinoa, caramelized carrots, garlic mushrooms and roasted peppers
