First... we can´t take credit for it, as it is from the website VeganRicha. But they decided to do a portion controlled version of the recipe, this is fine if you are trying to lose weight or be healthy but when we make cookies, we want to have at least a few each!!!!! ;)
Ingredients
These make about 20 small cookies or 12 medium ones.
For those new to cooking or non English speakers, TBSP = table spoon, i.e. the big ones you use to eat soup; on the other hand, tsp = teaspoon, the small ones you use to stir tea or coffee.
A
Canola oil 8 TBSP
Fine sugar 12 TBSP
Brown sugar 4 TBSP
Maple or Agave syrup 4 TBSP
Orange juice 8tsp (lemon works too)
Vanilla extract 1 TBSP
Nutritional yeast 1 TBSP (I know, this ingredient doesn't make any sense, but use it anyway it really works in this recipe)
Salt (a pinch)
B
White flour 16-20 TBSP (you need to check the texture, see photos)
Cocoa (optional, a couple of TBSP)
Baking soda (unless included in the flour) about 1/2 tsp
Chocolate Chunks (enough for the dough to maintain consistency, but as many as you can get into the cookies)
Mix all ingredients under A in a bowl (mix properly until they have a homogeneous consistency, I did not in the images but for your own good do as I say and not as I did! :op)

Add the flour and mix well. You can also add cocoa powder at this point if you want your cookies to look even more chocolaty.

Cut some chocolate chunks or use chocolate chips. You can also add some nuts but don't go too crazy (this happens a lot to us!) or it will be hard to make the dough stick together.

Make into small balls, flatten them and then put in over tray. Bake for 10-12mins at 180C (till the edges are golden/brown, if you take them too late, they will be less chewy and more crunchy). They should be (very) soft as they come out of the oven but they turn chewy and harden as they cool.

Enjoy alone or with your favourite milk (and/or company!). Currently, we have been drinking Cashew Nut milk and it makes an amazing snack!
Cashew nut milk recipe:
- Soak some raw and unsalted cashews (half a cup roughly) for 3-4h
- Discard water
- Blend cashews with 2 cups of water and 2 spoons of cocoa/drinking chocolate powder (you need to blend at full power to make sure it has very creamy consistency and no bits)
- Enjoy hot or cold
